Green Bean Medley
This is our Green Bean Medley. It is a mix of golden wax beans, green bush beans, and purple bush beans. We love the color that comes with this mix. It will put a pop on any dish you make. They do have different flavors to each bean and when mixed they compliment each other wonderfully. **Note: When the purple beans are cooked, they will loose their purple color. The purple color is a pigment called anthocyanin. When heat is added to the bean it changes its acidity level and starts to break down that pigment. The anthocyanin has no flavor so this deterioration will not affect the flavor of the bean. You could try soaking the beans in vinegar or lemon juice to raise the acidity level before cooking then cook lightly to protect some of that coloring. You can also eat the beans raw by snacking or in a raw green bean salad, they will keep that color.**
Our favorite recipe for the green beans is sauteing them in coconut oil until they are cooked. Add salt & pepper to taste.
How To Store
You can store the green bean medley in the refrigerator for up to 7 days. If you will not use them before 7 days, snap the ends off, wash them, dry them with a towel, and add to a freezer bag, then freeze. When you are ready to eat the green beans, you can take them straight from the freezer and cook frozen.
