Malabar Spinach isn't even spinach. It's an Indian green that loves the summer heat. So you will see this come around during the summer months. It has large leaves which make for easy baking. It is also a vine plant with vines as tall as 14ft. It's huge! It has a thicker texture than regular spinach and more of a mineral flavor. You can eat it raw or you can cook it.
One of my favorite recipes is to layer a 9x13 baking dish with the large leaf Malabar and layer with chicken. Find your favorite baked chicken recipe and follow that. The Malabar adds a great flavor to any dish.
How To Store
Store in the crisper drawer of the refrigerator! Will last 2 weeks.
