So you have mustard greens are your hand huh??

Must have gotten them from your local farmer.

They are not one of your commonly known vegetables. Maybe some of the higher end, organic restaurants may carry them, but chances are you won’t see them in your regular grocery store.

What are Mustard Greens?

Mustard greens are a leafy vegetable. They can be grown as baby size making them good to add to salads or they can be grown to a large size to be bunched similar to how you see kale.

They are in the brassica family which is the same family as broccoli. Brassicas love the cool weather so you will often see these greens in fall, winter, and spring here in Central Texas.

What do Mustard Greens taste like?

There are tons of different varieties of these greens but they all have the same undertone flavor…

Can you guess what that is??

Yep…mustard!!

The variety we grow is a sweet variety. It is actually amazingly sweet on the forefront but then has a Dijon mustard flavor towards the back.

This sauce is one of my family’s favorite sauces!!

You would think that with the spicy kick the greens have raw that they would give this sauce a little kick but it actually takes on the sweet flavor of the greens.

It is amazing as a dip or drizzled over veggies.

This creamy sauce is a perfect party dip!

Creamy Mustard Greens Sauce

Looking for something healthy for your next potluck party? This Creamy Mustard Greens Sauce is the perfect dip for parties or even to use drizzled on your next family meal!

Ingredients
  

  • 1 1/2 cups cashews
  • 1/2 cup water
  • 1 clove garlic
  • 2 tbsp lemon juice
  • 1 1/2 tsp Himalayan salt
  • 1 1/2 tbsp tapioca starch
  • 1 tsp onion powder
  • 1/3 lb mustard greens

Instructions
 

  • Add cashews, water, and garlic to a high speed blender.
  • Blend on high for 2 minutes until smooth.
  • Add all remaining ingredients.
  • Blend for another 2-3 minutes, using the tamper of the blender, until smooth and the greens are well blended.
  • Sever over veggies, potatoes, or even as a dip with chips!
  • Store in the refrigerator for 5-7 days.

Notes

You will need a high speed blender like a Vitamix blender to blend the cashews without soaking. If you do not have a high speed blender, soak the cashews in water for at least 4 hours so they will be soft enough to blend.
